Borrowing from her grandmother’s recipe books, Head Chef Blaze Young has a knack for bringing forgotten classics to the modern day, utilising super fresh, hyper-local produce.
“My excitement for food stems from the beautiful produce that we have access to in WA. Being able to work with mushrooms harvested a few hours before they arrive in the kitchen, or a pristine pink snapper that came off the boat that morning. That's what gets me excited - showcasing things simply and elegantly to let the quality shine.”
